
Serves 4, cook time: about 20 mins.
2 lbs Russet Potatoes (about 5 medium potatoes)
1 tbsp Sea Salt
1 Cup Whole Milk
4 tbsp Unsalted Butter
2 tbsp Sour Cream
Ground Black Pepper and pinch of Sea Salt to taste
2 tbsp Chopped Chives (optional)
- Bring pot of water to boil with 1 tbsp sea salt
- Wash, peel and dice potatoes
- Place diced potatoes in boiling water, keep on high heat for 20 mins. or until potatoes are tender
- Heat milk and butter in sauce pan *do not boil, just heat*
- Turn off heat, drain potatoes and place back in pot
- Mash potatoes
- Add warm milk & butter to potatoes, stir until it starts to become a smooth mixture
- Add sour cream and stir until potatoes become thick
- Stir in fresh ground pepper and sea salt to taste
- Sprinkle mashed potatoes with chopped chives
